Prior to cooking, you will need to rinse your quinoa well. The only time you can skip this step is if you have purchased pre-rinsed quinoa in a box. Before quinoa is rinsed, it is covered in a bitter substance called saponin. Not only is it bitter, saponin can cause gastrointestinal distress. It is simple to rinse saponin of quinoa. Place your quinoa in a very fine metal colander or a colander that you have lined with cheesecloth. Rinse it in warm water for four minutes. You know that the quinoa is clean when the water is clear.
Cooking quinoa on the stove is usually the method that you will see in a quinoa recipe. Cooking on the stove top uses two parts liquid and one part quinoa. Bring the mixture to a boil, adding in salt if desired. Cook covered at a simmer until the water is absorbed, between fifteen and eighteen minutes. Remove from heat. Leave the quinoa covered for another five minutes.
A steam cooker is also a great way to cook your quinoa. As when you cook quinoa on the stove, you will need twice as much liquid as you have quinoa. It should take between fifteen and twenty minutes for all the water to absorb. Experiment with using different kinds of liquid when you cook quinoa. A few liquids that you might want to try are almond milk, regular milk, juice (apple is great), vegetable broth and chicken broth. Of course, you need to match your cooking liquid to the dish that you are preparing. Milk and juice work great when making a breakfast cereal but are not so good when the quinoa is going to be used in a stir fry!
